A. Our products are hand-cut and packaged in a state-of-the-art facility in compliance with HACCP, USDA QTV, and SQF programs. See our food safety page for more information on these programs.

Q. What are the important handling techniques for fresh-cut produce?

A. Produce is washed, dried, and ready-to-eat out of the bag, but it must be kept cold and wrapped to protect it from dehydration.

Q. Where are my opportunities to sell fresh-cut produce?

A. Just about anywhere portion control, cost control, safety, and convenience are important (i.e., hospitals, hotels, schools, restaurants, chain accounts).

Q. At what temperature should you store fresh-cut produce?

A. Between 34-38 degrees F.

Q. What are the advantages of fresh-cut produce?

A. First and foremost, safety and sanitation. Fresh-cut produce also saves money, space, is convenient, is consistent in size and price, provides 100% yield, and reduces waste and labor costs.

Q. What is HACCP and why is it important?

A. HACCP stands for Hazard Analysis and Critical Control Points program. It is important for product safety and sanitation. Product is screened daily for microbiological contaminants. Dedicated chlorinated water systems are used for sanitation, and pH and chlorine levels are continuously monitored in all preparation water. Prior to palletization and shipping, all products pass through metal detection devices.

Q. Can you custom pack sizes to meet my batch specifications?

A. Yes, any weight up to 20# currently can be measured and packaged, including fractions of a pound.

Q. Why does larger packaging provide value?

A. As with many products, the larger the package, the cheaper the labor and material required due to speed and efficiency.

Q. Can my order be shipped in re-usable, returnable containers?

A. Yes, depending on the type of container.
