Beet Noodle & Arugula Salad

1 - 10oz ECF Beet Spirals

2 tbsp. extra virgin olive oil

2 tbsp. lemon juice

¼ tsp. garlic powder

Salt and pepper to taste

2 cups baby arugula

1/3 cup goat cheese crumbles


  1. Whisk the olive oil, lemon juice, garlic powder, salt and pepper until incorporated. 
  2. Add in the beet noodles to the dressing and stir to combine.
  3. Add in the arugula and goat cheese, and gently stir, just until mixed together.
  4. Optional: Add in walnuts, almonds, or pecans, and top with some extra goat cheese before serving!
