1 - 10oz ECF Beet Spirals
2 tbsp. extra virgin olive oil
2 tbsp. lemon juice
¼ tsp. garlic powder
Salt and pepper to taste
2 cups baby arugula
1/3 cup goat cheese crumbles
- Whisk the olive oil, lemon juice, garlic powder, salt and pepper until incorporated.
- Add in the beet noodles to the dressing and stir to combine.
- Add in the arugula and goat cheese, and gently stir, just until mixed together.
- Optional: Add in walnuts, almonds, or pecans, and top with some extra goat cheese before serving!
